Eat from Pantry - Week 2 Completed!!

Week Two is OVER!! This past week the challenge truly began. The choices are certainly more limited. But we made it!!!

Friday

Breakfast - Homemade Biscuits and Link sausage (buried in freezer)
Lunch - Turkey a la King over left over Biscuits
Dinner - Ground Beef Pie (This is by far the best thing I have made so far!!!)

2 lbs ground beef
1 onion diced
handful of mushrooms sliced
3 medium diced
3 medium carrots
Salt
Pepper
Rosemary
Parsley Flakes
Garlic Salt
2TBL of flour
Beef Broth (I made mine with 3 cups water 3 bouillion cubes)
Pie Crust (Luckily I had one in the freezer)

Brown the ground beef and diced onion. Add sliced mushrooms toward the end. Put in a medium mixing bowl. Add about 2 TBL oil to the skilled and saute the diced carrots and potatoes until lightly browned. Put in the mixing bowl. Mix in Spices (Sorry no measurements, about that much..I think thyme would also be good.) Use whatever spices you like or have on hand.

Heat another 2 TBL of oil in the skilled. A 2 TBL of Flour and mix until a paste forms. Add beef broth and cook until thick. Pour into mixing bowl with beef and vegetable mixture. Mix together and pour into a 9x13 baking dish.

Top with pie crust. You could also top with canned biscuits or even just top with cheese. Bake at 375 until bubbly and top is browned.

Breakfast - Oatmeal Cookies
Lunch - Leftovers
Dinner - Fish Sticks (YUCK!!) and French Fries

Sunday
Breakfast - Cereal
Lunch - McCallister's - (Leftover from a meeting David had a church) YUMMY!!
Dinner - Clean out fridge Leftovers

Diane, I would love to talk to you about eating out of the pantry, especially with 4 kids. I spend almost $450 dollars a month on groceries. We do not eat out much at all. How do you get to the point where you only spend $50 a month? Please fill me in so I can start saving more.
